How to Make My Chocolate Raspberry Chia Seed Pudding Recipe
Step 1: Make your Chia Seed Pudding
Combine milk, chia seeds, maple syrup, vanilla extract, and salt in a jar. Stir it with a fork and allow it to sit and soak for about 5 minutes.
Stir it again with a fork to break up any clumps of chia seeds. Cover with a lid and store in the fridge for at least 4 hours or overnight.



You can add the cocoa powder and a tablespoon of maple syrup before you serve your chia pudding. Or, you can add them to the jar before you let it sit overnight. I like to make up a large batch of basic chia seed pudding and then add then flavor the desired servings with cocoa powder and an extra tablespoon of maple syrup.


Step 2. Make the Cream Cheese Greek Yogurt Mousse
Beat whipping cream for several minutes until stiff peaks form. You could also use premade whipped topping. I like to use the beaker and whisk attachment with my immersion blender.


Mix the mousse ingredients except for the whipped cream in a bowl and stir with a spatula or whisk until well combined.
Gently fold in the whipped cream and mix with a spatula until well combined.



Step 3. Prep the Granola
Make my delicious Healthy Gluten-Free Double Chocolate Granola at least one hour before layering this pudding so it has time to cool.

Step 5. Layer the Pudding
Pour a handful of double chocolate granola into the bottom of the glass. Then spoon 1/2 cup of chia seed pudding on top. Pour in a layer of chocolate greek yogurt mousse. Spread another layer of granola. Top with fresh raspberries and chocolate sprinkles.
