Cottage Cheese: For a dairy-free option, use dairy-free yogurt or blended silken tofu. Cashew cream can also be used to achieve a creamy texture.
Maple Syrup: Replace maple syrup with honey, agave nectar, or another liquid sweetener of your choice.
Vanilla Extract: Vanilla bean paste, vanilla powder, or scraped vanilla bean seeds can replace vanilla extract.
Cookie Dough Chunks: Instead of traditional cookie dough, you can make my Gluten-Free Chocolate Chip Energy Bites.
Remember that substitutions might affect the taste, texture, and overall outcome of the recipe. Always do a small test batch when making significant substitutions, especially if you have dietary restrictions or specific taste preferences.
How to Make Chocolate Chip Cookie Dough Cottage Cheese Ice Cream
Step 1. Premake the Cookie Dough Bites
View my recipe and video for my Gluten-Free Chocolate Chip Cookie Dough Energy Bites.
You can also use store-bought cookie dough or make your own from your favorite recipe.
Step 2. Combine all the Ingredients
Combine the cottage cheese, maple syrup, vanilla, and salt in a medium-size mixing bowl. My favorite is this glass batter bowl. Mix the ingredients until smooth using an immersion blender.
Step 3. Pour the Ice cream
Pour the ice cream into a shallow dish or pan. This will allow the ice cream to cool and thaw more quickly.
Step 4. Crumble the Dough
Break the Gluten-Free Chocolate Chip Cookie Dough Bites into smaller chunks and drop them into the ice cream.
Step 5. Add the Chocolate Chips
Sprinkle the mini chocolate chips over the ice cream. Then submerge all the cookie dough bites into the ice cream using a spatula.
Step 6. Freeze & Enjoy
Place the ice cream in the freezer for at least two hours or until it is firm. Then remove the ice cream and enjoy! If it is too hard to scoop, allow it to cool on the counter for 10-15 minutes until slightly thawed.
Is Cottage Cheese Ice Cream Healthier Than Traditional Ice Cream?
One half-cup serving of traditional Chocolate Cookie Dough Ice Cream has 16 grams of sugar. And it’s made with processed white sugar, corn syrup, other artificial ingredients, and preservatives. This recipe has 14 grams of sugar. And it’s naturally sweetened with maple syrup.
Traditional ice cream only has 2 grams of protein, but this recipe has 14 grams of protein!
My conclusion is YES, this recipe is healthier than traditional ice cream for the following reasons:
- Naturally sweetened
- Lower glycemic value
- MUCH higher protein
- Higher calcium
- Allows control over all the ingredients!
Recipe Notes
Customization: Feel free to experiment with additional mix-ins, such as chocolate chips, crushed nuts, or other fruit variations. Be mindful of the moisture content of the added ingredients, as it could impact freezing.
Thawing: If the ice cream becomes too firm in the freezer, let it sit in the refrigerator for 15-20 minutes or out on your counter for 10 minutes before serving. This will help soften it slightly and make scooping easier.
Serving Suggestions: Consider serving the ice cream in gluten-free cones or alongside fresh berries for an extra pop of color and flavor.
Dietary Preferences: This recipe can be adapted to various dietary preferences. For dairy-free options, substitute dairy ingredients with suitable alternatives, such as plant-based cottage cheese.
Texture Variation: Due to the use of cottage cheese and natural ingredients, the texture of this ice cream may differ slightly from traditional commercial ice cream. Embrace its unique creaminess and enjoy the wholesome flavors.
Presentation: Before serving, you can garnish individual portions with additional chocolate chips or melted chocolate syrup.
