It’s made with creamy great northern beans, Greek yogurt, freshly grated parmesan cheese, garlic, and olive oil, creating a dip that’s perfect for veggies or crackers. This recipe comes together quickly, and I love how it brings out rich flavors with minimal effort. Whether you’re prepping snacks for a party or just want a satisfying side dish, this dip is always a hit.

  • Garlic: If fresh garlic isn’t available, garlic powder can be used in a pinch, about 1/4 teaspoon for each clove.
  • Olive Oil: Avocado oil works just as well and adds a nice richness to the dip.

How to Make My Garlic Parmesan White Bean Dip

Step 1: Choose Your Beans

I recommend any white bean, including great northern beans, cannellini beans, or navy beans, for their mild flavor and to preserve the white color of this dip. You can buy them canned or raw and uncooked, but I prefer to buy organic raw great northern beans and pressure cook them myself. It only takes 18 minutes under pressure in my Instant Pot pressure cooker. I can set it and forget it to cook a batch of beans. Typically I cook up more than I need and store them in a silicone bag in my freezer.

Step 2: Prep Your Cheese

Buying a block of cheese and grating it yourself is the best option for getting a smooth and silky white bean dip when served warm. Store-bought shredded cheese is often powder coated with cellulose, so the strands don’t stick together. But they don’t melt as smoothly as cheese grated from a block. My favorite block cheese for this recipe is Parmigiano Reggiano.

Step 3: Prep Your Gralic

One of my favorite kitchen gadgets is my stainless garlic press.  You’ll want to either finely chop or crush a clove of garlic in your press and have it ready to go into your dip.

Step 4: Time to Blend

A food processor works best for blending all the ingredients into a creamy dip, but I love using the chopper cup which comes with my favorite immersion blender. Combine the remaining ingredients including greek yogurt, cheese, garlic, and seasonings and simply blend until smooth.

Step 5: Warm And Serve

Pour your dip into an oven or microwave-safe bowl and warm it up in a 350 F oven for about 10 minutes. Or you can heat it in the microwave for 1 minute to melt the cheese. Then top with a few sliced green onions for an attractive garnish, and you’re ready to enjoy this delicious dip!

Step 6: Store Any Extra Beans

I pressure-cook large batches of raw beans and then store the excess for future use. I love using these silicone storage bags to store the extra white beans in the freezer. These silicone bags are awesome because they help minimize the amount of plastic in my kitchen.

Blending tip: For extra smoothness, you can blend the dip longer, especially if your beans are a bit firm.

Adjust consistency: If the dip is too thick, add a tablespoon of water or extra olive oil until you reach your desired texture.

Cheese swap: Any white cheese can work here, but parmesan adds the best balance of salty and sharp flavors.
