Ingredients & Substitutions

Here is everything you need to make healthy big mac baked nachos and sauce:

Ground Beef: Use lean ground turkey or chicken for a lighter option with less fat, or plant-based ground meat for a vegetarian or vegan alternative.

Avocado Oil: You can also use light olive oil or any oil with a high smoke point.

White Onion: Substitute with red onions or green onions for a slightly different flavor profile, or shallots for a milder taste.

Garlic: Replace with garlic powder, using 1 teaspoon for 4 cloves of garlic, or shallots for a milder, sweeter flavor.

Worcestershire Sauce: Swap with soy sauce for a similar umami flavor, or balsamic vinegar for a tangy alternative.

Salt and Pepper: Use herb blends like Mrs. Dash for a salt-free seasoning, or sea salt or pink Himalayan salt as a healthier salt option.

Cheddar Cheese: Opt for low-fat cheddar for a lighter option, vegan cheese for a dairy-free alternative, or nutritional yeast for a cheesy flavor without the dairy. You can also spread pieces of American cheese over the chips.

Tortilla Chips: Choose baked tortilla chips for a lower-fat option, or kale chips or sweet potato chips for a healthier twist.

Lettuce: Substitute with spinach or arugula for more nutrient-dense greens, or cabbage for a crunchy alternative.

Roma Tomatoes: Use cherry tomatoes, sliced in half for a sweeter option, or sundried tomatoes for a more intense flavor.

Pickle Slices: Replace with fresh cucumber slices for a milder taste, or banana peppers for a spicier kick.

Sesame Seeds: Use chia seeds for added nutrition, or hemp seeds for a similar texture and nutritional boost.

Greek Yogurt: You can also use mayo, whipped cottage cheese, or sour cream.

Mustard Powder: Mustard in a jar will also work instead.

Pure Maple Syrup: You can also use honey, agave nectar, or granulated sugar.

Apple Cider Vinegar: White vinegar can also be used.

Onion Powder, Paprika, Garlic Powder: You can adjust, replace or omit any of these seasonings if needed.

How to Make My Healthy Nachos Recipe

Here are easy, detailed, step-by-step instructions for making my easy ground beef nachos. The instructions are also repeated in the recipe card at the bottom of this blog post.

Step 1: Cook the Ground Beef

Preheat your oven to 400°F.

In a large skillet over medium heat, add the oil and onions. Toss the onions to coat and cook for 1-2 minutes. Add the ground beef, minced garlic, Worcestershire sauce, salt, and a dash of pepper. Cook for 5-7 minutes or until the meat is brown. Drain off the oil and transfer the meat mixture to a paper towel-lined plate.

Step 2: Bake the Nachos

Spread the tortilla chips in a single layer in a large sheet pan. Sprinkle half of the shredded cheddar cheese over the chips. Evenly distribute the cooked ground beef mixture over the layer of chips followed by the remaining cheese.

Bake the nachos for 10-12 minutes or until the cheese is melted and bubbly.

Step 3: Prepare the Fresh Ingredients

While the nachos are baking, shred the lettuce, dice the Roma tomatoes, and prepare the pickle slices.

Step 4: Make the Big Mac Sauce

In a small bowl, combine the greek yogurt, avocado oil, mustard powder, maple syrup, apple cider vinegar, onion powder, paprika, garlic powder, salt and pepper and whisk until well combined.

Helpful Recipe Notes

Chip Shapes: Choose tortilla chips that are relatively flat. If any of the chips are folded in half, simply break them in half to create a flatter surface for all your toppings.

Serving: These nachos taste best when served immediately after assembling.

Seasoning: You can adjust the seasonings and sauce to your taste preference.

Delicious Nacho Serving Suggestions

Big Mac Salad: Transform the nachos into a Big Mac salad by serving the seasoned beef, fresh toppings, and Big Mac sauce over a bed of shredded lettuce. Add crumbled tofu for extra protein and texture.

Big Mac Vegan Nachos: Create vegan big mac nachos by replacing the ground beef with crumbled tofu seasoned similarly and adding black beans for extra protein. Use vegan cheese and a vegan-friendly dressing for the sauce.

Loaded Nacho Platter: Serve a loaded nacho platter by adding black beans and crumbled tofu along with the traditional toppings. This adds extra protein and makes the dish heartier.

Nacho Bowls: Create individual nacho bowls for a fun and customizable serving option. Layer tortilla chips, seasoned ground beef or crumbled tofu, black beans, and cheese in bowls, then top with fresh lettuce, tomatoes, and pickles. Drizzle with Big Mac sauce before serving.

Family-Style Nacho Bar: Set up a family-style nacho bar with separate bowls of seasoned ground beef, crumbled tofu, black beans, shredded lettuce, diced tomatoes, pickles, cheese, and Big Mac sauce. Let everyone build their own nacho plates according to their preferences.

Refrigeration: Store any leftover nachos in an airtight container in the refrigerator. They can be kept for up to 2 days.

Separate Toppings: If possible, store the fresh toppings (lettuce, tomatoes, pickles) separately from the nachos to maintain their freshness and prevent sogginess.

Reheating Instructions: To reheat, spread the nachos out on a baking sheet and warm them in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through. This will help the chips regain some of their crispiness.

Microwave Reheating: If using a microwave, place the nachos on a microwave-safe plate and heat in short intervals (30-45 seconds), checking frequently to avoid making the chips too soggy.

Fresh Toppings: Add fresh toppings after reheating to maintain the best texture and flavor.

Avoid Freezing: Freezing is not recommended as the tortilla chips can become too soft and lose their texture upon thawing and reheating.
