How to make the best-tasting snickers inspired viral date bark recipe with medjool dates, peanuts, peanut butter, chocolate, and sea salt

This Snickers-Inspired Date Bark combines sweet, chewy Medjool dates with creamy peanut butter, crunchy peanuts, and rich chocolate chips for the ultimate candy bar experience without all the processed stuff. Honestly, I created this recipe because I was getting tired of how I felt after eating regular candy bars – I wanted something that would satisfy my sweet tooth but not leave me feeling blah afterward.

After testing this with my family, I finally nailed the perfect combo that we think tastes better than the real thing because of all the fun flavors. The dates get soft and caramel-like, the peanut butter adds that creamy richness, and a sprinkle of coarse sea salt on top gives it that perfect sweet-salty balance. My kids literally choose this over actual Snickers bars now, and I can enjoy it without that heavy, processed feeling I used to get from store-bought candy.

Ingredients & Substitutions

Here is everything you need to make the best-tasting viral Snickers chocolate date bark recipe:

Medjool dates: You can use another date type, such as Deglet Noor or Halawi. You may need to add a few extra dates to make up for the difference in sweetness.*

Peanuts: You can use another type of nut, such as almonds or walnuts. You can also use seeds, such as sunflower seeds or pumpkin seeds.

Peanut butter: You can use another type of nut butter, such as almond butter or cashew butter. You can also use tahini, a paste made from ground sesame seeds.

Chocolate chips: You can use another type of chocolate, such as chopped chocolate, melting wafers, or chocolate chunks. You can also use carob chips, a good vegan alternative to chocolate.

Coarse sea salt: You can use another type of salt, such as table salt or kosher salt. You can also use a pinch of sugar or brown sugar to add sweetness.

*I have not tested this substitution and can not endorse the result.

How to Make My Snickers-Inspired Date Bark Recipe

Step:1 Make the Date Layer

Slice 12 pitted medjool dates in half and place them side-by-side, in four rows of six date halves, on a sheet of parchment paper. Cover with a second sheet of parchment paper and roll them out to about 1/8″ thickness using a small rolling pin.

Step 2: Peanuts and Peanut Butter

Spread the peanut butter on the smashed date halves. Then roughly chop the peanuts and sprinkle them on the peanut butter layer.

Step 3: Melt the Chocolate

Add the chocolate chips and coconut oil to a microwave-safe bowl. Heat in 20-second intervals in the microwave. Remove the bowl from the microwave after each interval and gently stir.

NOTE: Microwaving the chocolate for over 20 seconds at a time could cause the chocolate to overheat and become thick, clumpy, and impossible to melt again to a smooth consistency.

Step 4: Add the Chocolate

Pour the melted chocolate over the bark and gently spread with a spatula. Be sure to cover all the nuts and the date layer.

Step 5: Finishing Touches

Sprinkle coarse sea salt over the chocolate and a few of the chopped peanuts. Transfer the bark and the parchment to a baking sheet and place in the fridge for 30 minutes to set. Or, you can place the bark in the freezer for about 5-10 minutes until the chocolate sets. Then either break apart or cut the bark into smaller pieces to enjoy!

My Expert Recipe Notes

Choosing Dates: Medjool dates work best for this recipe due to their natural sweetness and chewy texture. If you use other date varieties, you may need to adjust the sweetness.

Rolling Out Dates: Rolling the dates between two sheets of parchment paper makes them easier to work with and creates a uniform layer for the base of the bark.

Chocolate Melting: Be cautious when melting white chocolate to prevent overheating. Use short intervals in the microwave (about 20 seconds) and stir in between. Overheated chocolate can become clumpy and challenging to work with.

Dietary Considerations: This recipe is dairy-free and vegan, making it suitable for those with dietary restrictions. Be sure to use dairy-free chocolate chips or wafers.

Delicious Serving Suggestions

  • As a quick dessert: Enjoy a square of this bark after dinner for a satisfying sweet treat.
  • With hot chocolate: Pair it with your favorite warm drink for a cozy snack break.
  • As a topping: Crumble it over yogurt or oatmeal for an extra bit of sweetness and crunch.
  • On-the-go snack: Pack it up for a midday pick-me-up when you’re on the move.

Frequently Asked Questions

Keep your Snickers date bark in an airtight container in the fridge—it stays perfectly chewy and firm this way. I usually line the container with parchment so the layers don’t stick together. It’s best eaten within 5–7 days (if it lasts that long in your house!).

Yes! As long as you’re using gluten-free chocolate chips and double-check your peanut butter and toppings, this bark is naturally gluten-free. It’s one of those treats that feels super indulgent but totally fits into a gluten-free lifestyle.

Totally. Freeze the bark in a single layer first, then pop the pieces into a freezer-safe bag or container. I love sneaking one straight from the freezer—it tastes like a chilled candy bar with zero effort. This is my favorite way to store it!

Use Medjool dates if you can—they’re soft, sticky, and give you that rich caramel-like base without needing to cook anything. If your dates feel dry, just soak them in warm water for 5 minutes to bring them back to life.

Yep! Almond butter, cashew butter, or sunflower seed butter all work beautifully. You’ll still get that creamy, nutty contrast to the chewy dates and crunchy peanuts—just use what you love or have on hand.

Healthy is relative, but I’ll say this—it’s made with real, whole ingredients. No refined sugar, no corn syrup, no weird additives. Just chocolate, dates, nut butter, and peanuts. It satisfies that sweet tooth without making you feel blah afterward.
