Packed with protein and healthy fats, these 3-ingredient avocado bread buns are a simple gluten-free alternative to traditional buns. They bake up soft and satisfying with a rich, buttery texture from the avocado and no bitter aftertaste. I also share an easy seasoning trick and both oven and air-fryer options so you can make them work with the tools you already use.

I was so excited when I discovered a way to combine avocado and a bun in one recipe. These buns leave me feeling full and satisfied from the healthy fats, but without that heavy, sluggish feeling I get from regular gluten bread buns. Plus, they’re genuinely fun to shape and bake — you’ll feel like a kid playing with dough! I can’t wait for you to try them. Be sure to check out the Ingredients & Substitutions section for tips on adapting them to fit your diet and taste preferences.

What is Avocado Bread?

Avocado bread is a quick and easy bread recipe made with just three main ingredients: avocado, egg, and cheese. It’s naturally gluten-free and can be a good source of healthy fats and protein depending on the cheese used. The base is a mashed avocado mixed with an egg and shredded cheese. This batter is then baked until set, resulting in a dense and savory bread-like texture. It’s a versatile base that can be enjoyed plain or customized with additional ingredients like herbs, spices, or chopped vegetables.

Why These 3-Ingredient Avocado Buns Work

This recipe works because avocado provides healthy fats and moisture, while egg and cheese create structure and protein without flour.

  • Quick and easy: With just three ingredients—avocado, egg, and cheese—you can whip up these buns in no time.
  • Naturally gluten-free: A great option for those following a gluten-free or low-carb diet.
  • Savory and moist: These avocado buns are packed with flavor and have a satisfying, soft texture.
  • Customizable: Top with Everything Bagel Seasoning or your favorite spices, and bake or air fry!

Ingredients & Substitutions

Here is everything you need to make easy avocado bread buns:

  • Ripe Avocado: This makes the bread smooth and creamy.
  • Large Egg: Binds the avocado and cheese together while adding structure and protein.
See the “Easily Adapt This Recipe” section below for egg-free options.
  • Mozzarella Cheese (Primary Option)
Creates structure, moisture, and a mild flavor.
    Other Cheese Options
Cheddar, Monterey Jack, or pepper jack all work well for stronger flavor.
    Dairy-Free Option
Use shredded dairy-free cheese that melts well. Texture will be softer.
    No-Cheese Option
Add one additional egg for binding, or a few tablespoons of almond flour for structure.
  • Everything Bagel Seasoning: This is optional but adds delicious savory flavor. You can replace it with your favorite seasonings for a different variety.
  • Garlic Powder, Onion Powder, Sesame Seeds, and Poppyseeds: You can add these instead of using Everything Bagel Seasoning.

Easily Adapt These 3-Ingredient Avocado Bread Buns for Any Diet

These avocado bread buns are naturally flexible and easy to adjust. Use the swaps below to fit your dietary needs while keeping the buns soft, savory, and sturdy.

  • Gluten-Free:
The recipe is naturally gluten-free as written since it’s made without flour. No special substitutions are needed.
  • Dairy-Free:
Replace the cheese with a shredded dairy-free cheese that melts well. If skipping cheese entirely, add one additional egg for structure. The buns will be softer but still hold together.
  • Egg-Free:
Use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water). Let it thicken before mixing. The texture will be slightly more delicate, so bake until fully set.
  • Lower-Carb / No Added Sugar:
This recipe is already low carb and contains no added sweeteners. No changes needed.

💡 Pro Tip: Avocado size and ripeness can affect the mixture. If the batter feels too loose, add a tablespoon of almond flour or extra cheese to help it hold its shape.

How to Make My Healthy 3-Ingredient Avocado Protein Bread Recipe

Here are easy, detailed, step-by-step instructions for making my easy avocado bread recipe. The instructions are also repeated in the recipe card at the bottom of this blog post.

How Do You Prevent a Bitter Aftertaste in Avocado Buns?

Everything Bagel Seasoning contains larger flakes of onion and garlic that can burn and leave a bitter aftertaste if sprinkled on top of the buns for the entire baking time.

Seasoning Option 1: Add the garlic powder, onion powder, and salt to the mix. Sprinkle sesame seeds and poppy seeds over the top of the buns before they bake.

Seasoning Option 2: Add the Everything Bagel Seasoning to the tops of the buns half-way through baking. Then they only bake for 10 minutes and do not burn.

Step 1: Prep the Ingredients

Preheat your oven to 400°F. Line a cookie sheet with parchment paper or lightly grease it with oil.

On a plate, mash the avocado with a fork until smooth. Shred the mozzarella cheese.

Whisk the egg in a medium bowl and then add the mashed avocado and mozzarella cheese. If using Seasoning Option 1, then add garlic powder, onion powder and salt to the mixture.

Stir with a spatula until well combined.

Step 2: Bake the Protein Buns

Divide the mix into four equal portions and drop onto the prepared baking pan. The mixture will be thick and scoopable, similar to soft mashed potatoes. Spread each mound into a circle or square shape about 1/4″ thick. Make it slightly thicker around the edges.

Seasoning Option 1: Lightly sprinkle sesame seeds and poppy seeds over the top of the buns. Bake for 20 minutes until the tops are golden brown.

Seasoning Option 2: Bake the buns for 10 minutes, remove from the oven, and sprinkle with Everything Bagel Seasoning. Then bake for an additional 10 minutes until the tops are golden brown.

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Bake in an air fryer: Divide the mixture into 4 portions and spread on a piece of parchment paper cut to the size of the air fryer basket. Bake at 400ºF for 10 minutes. Then carefully remove the parchment paper from the basket, flip the patties over with a spatula, lower the parchment paper and buns back into the air fryer, and bake for another 4 minutes or until golden brown.

My Expert Recipe Tips

  • Ripeness of Avocado: Ensure your avocado is ripe for easy mashing and a smooth texture in the bread. An underripe avocado may result in a chunky and less cohesive batter.
  • Texture Variations: For a slightly denser avocado bread, you can add a tablespoon of almond flour or coconut flour to the batter. This will also add a bit more fiber and structure to the bread.
  • Thickness: I’ve found that baking these slightly thinner helps them cook evenly without drying out.

What to Serve with 3-Ingredient Bread Buns with Avocado

  • Eggs: Pair your avocado bread buns with my cottage cheese scrambled eggs. The creamy avocado and cheesy buns perfectly complement the rich flavor of eggs.
  • Smoked Salmon: Top your buns with smoked salmon, a dollop of cream cheese, and a sprinkle of fresh dill or chives for a sophisticated and nutritious meal.
  • Avocado and Tomato Slices: Enhance the avocado flavor by adding slices of fresh avocado and juicy tomatoes. Drizzle with olive oil and sprinkle with salt and pepper for a simple yet delicious topping.
  • Turkey or Chicken Slices: Add slices of turkey or chicken breast for a protein boost. To make a satisfying sandwich, add a slice of cheese and some leafy greens.
  • Hummus and Veggies: Spread a generous layer of hummus on the buns and top with sliced bell peppers, cucumbers, or carrots for a plant-based, nutrient-dense snack.
  • Grilled Vegetables: Serve the buns alongside grilled vegetables like zucchini, eggplant, and bell peppers for a hearty and colorful meal.
  • Soup or Salad: Pair the avocado bread buns with a bowl of my white chicken chili soup or my Mexican caesar salad. They make a great side dish to complement your main course and add a dose of healthy fats and protein.

Frequently Asked Questions

Store the bread in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze slices in a single layer on a baking sheet, then transfer to a zip-top bag. Frozen slices can be stored for up to a month.

Yes, you can reheat slices in a toaster, toaster oven, or conventional oven. Avoid microwaving as it may make the bread soggy.

Yes, you can substitute mozzarella with other cheeses like cheddar, pepper jack, or a blend of your favorites. Each type will add a unique flavor to the bread.

Here are a few responses from viewers with additional cheese substitute suggestions…
“…a good dairy-free cheese brand is Daiya. It melts like dairy cheese and tastes great. You can also try the Follow Your Heart brand. It’s pretty good as well.”
“I found a brand at my local Walmart that’s called Violife. It’s completely non-dairy, but it looks, smells, melts and tastes like the real thing.”

  1. Today I am just coming down from a 3 day water fast and made these Avocado flatbreads as my second meal. This recipe was very easy to make, the instructions were easy to follow and they came out looking really good. Since I am still in my fast it took a lot of will power to just not dive into one of them. I think they will be worth the wait. Thank you for this.

  2. Made these today…been waiting for the 2 avocadoes to ripen on the counter! One was perfectly soft, the other not so much. I chopped it into very small pieces and tried to puree them in my 4 cup processor but that only partially worked. But I wasn’t deterred! I had the ingredients ready to go, had the baking pan ready to go and the seasoning jar ready. I used option 2 for the seasoning, made 8 perfect “patties” on the parchment paper, put in the oven for 10 minutes. Took the pan out & sprinkled a bunch of Everything Bagel on each patty. Back into the oven they went but I left them in for 15 minutes and edges browned up beautifully! My other half was salivating wanting to try them, but we will have 2 each tomorrow when I make hamburgers and homemade fries. These are SO easy to make, smell delicious and avocado is perfect for your health!! Can’t wait to have them for dinner tomorrow! Thanks so much for the recipe!

    1. Hi Barb, I’m so glad you were so patient with your avocados and loved this recipe! Thank you for the review 🙂

  3. We’re in love with them and won’t buy bread again! I don’t do carbs anymore but our son loves a sammi for work everyday and this is way healthier for all of us!!!❤

    1. Hi Audrey, thank you so much for the review! I’m so glad you can enjoy ‘bread’ again 🙂

  4. I made this a few weeks ago but today I decided to add a bit of gluten free flour, went easy on the spices, less cheddar cheese but incl. some Parmesan & Brie. I wanted to make it one big patty for my lunch, so added about 1 tsp. of pure Maple Sryup and put a few blueberries on top, it was delicious! Took about 12 min. in the air fryer.

  5. I’ve been wanted to make this recipe for
a while. I knew they would be delicious, but they were even tastier than I imagined!! They were absolutely annazing, and so healthy!! My husband and I loved them!! I will be making these again and again.
    Thank you Nicole!!!

  6. As with everything tried on Nicole’s website, these are easy, just delicious and such a perfect texture. What a great replacement for bread — way better than bread in every way. Ummmm, ummmm, ummmm!

  7. I just had my first sandwich in over 2 months (Supergut book – no wheat – no sugar). Your recipe is so good. A ham sandwich with mustard and it was soooo good. Thank you so much. I’ve discovered making my own crackers with almond bread -so good and so easy but now I can have sandwiches again. I’m looking forward to having a hamburger now too. Yeehaw!

  8. Such a simple recipe but paired beautifully with home made chicken burgers! Making them again tonight for Friday night dinner!

I also love your video style – short, to the point with clear, concise instructions! Thank you!

  9. I’m so excited to try this recipe! One question: what size avocado is the recipe based upon? I assume medium…I have a bunch of small avocados that need to be used soon & thought maybe 2 of those per serving may work?

    1. Yay, Rhonda! I think you’re going to love it 🙂 Yes, the recipe is based on 1 medium/large avocado. I recommend using 2 small avocados. Let me know how it turns out 🙂

  10. This is a wonderful recipe. I just made burgers with avocado buns for supper and it was the tastiest meal I have had in a long time. My husband is on a gluten free diet and he really enjoyed this! Highly recommend! Thank you!

  11. This is a wonderful recipe. I just made burgers with avocado buns for supper and it was the tastiest meal I’ve had in a long time! Highly recommend. My husband is on a gluten free diet and he really enjoyed this! Thank you!

  12. I made these avocado “buns” recently and they were great! Super easy and came out just like the video shows and tasted really good. We’ve used them now for some leftover pork loin sandwiches and also as a bun for grass fed burgers! Very good with both! A keto recipe with all ingredients we like.

  13. I made these yesterday. They are delicious! They hold together well like a sandwich bread, which surprised me. I used Trader Joe’s Lite Shredded 3 Cheese Blend, & Shredded Low-Moisture Part-Skim Mozzarella Cheese, 1/2 cup each(1 cup total), & they cooked beautifully. Tasty as a pick me up. I am thinking of adding a little veggie to the recipe, like broccoli or cabbage, to up the vegetable ante!! 😃
    Thanks, GentleTummy 🤗

  14. This avocado bread is by far the best bread substitute l’ve ever tried! It’s thick (about 1/4″), it’s got good texture, and it doesn’t get soggy.
It has an avocado flavor which is a bonus for me because usually l add avocado to my sandwiches/burgers and they always slide out!
They also stay fresh. We used them for tuna sandwiches (lots of mayo) and could only eat half so we stored them in an airtight container in the fridge. Ate some the next day and the bread was just as fresh tasting and no sogginess.

    1. Excellent. I used leftover thick guacamole to sub for the avocado (had a bunch leftover from a dinner). I used 150gm of the guac., (~1/2 cup). I added 2 tablespoons almond flour and 1 tablespoon nutritional yeast. I formed 6 rounds which were just a bit thinner, but they held up well. We had the first couple just to eat with a salad. Will definitely make again. Thanks Nicole for another great recipe.

  15. I saw this recipe and had to try it. Leftover taco meat? Well, why NOT??? Little bit of Cilantro and some salsa….amazing!!!! Thank you for this treat! I see myself making it quite often using it so many different ways!

  16. I had to give up bread and came across this recipe. It’s so simple to make and it taste amazing. I used it to substitute the buns on our burgers and the next day for a small chicken wrap/slider.

  17. Hi! Thanks for the easy, precise instructions! Made these to alternate with my Cottage Cheese bread, now life is not so boring! Lol 🤗
    Love your kitchen!

  18. This is my first recipe of hers and it was so good. That everything bagel seasoning made it go over the top with deliciousness. I’m definitely going to use this to make a bigger one for a pizza crust.

  19. Fabulous.
Not too bad for Slimming World if you have half the total cooked = 1xA (mozarella) and 4 syns for the avocado

  20. This was easy to make and delicious! I used the everything bagel seasoning and put it on at the 10 minute mark as suggested. My husband loved it too!

  21. Oh my goodness! This is sooooo good! I was not expecting to like it but had an avocado leftover and thought I would try this recipe. It seriously is so good and I will definitely be making it a lot! Thank you!

  22. Dear Barbara, we have some keto friends and this is he perfect bread to serve. I made a double batch of the buns yesterday and put them in the freezer for when our friends come to visit next week. I did taste them and they are delicious. Thank you so much for sharing your recipe..I so appreciate you.

  23. I just wanted to say thank you again. I just made my second batch of avocado bread using the 3 main ingredients from your recipe, this time doing it right. I used a really good quality Parmesan cheese. They are the bomb. The texture and flavor are to die for. I used your three main ingredients and added my seasonings according to my preference. I use dried green chives, everything bagel seasoning, a good squeeze of half a lime and about a quarter cup of ground up oatmeal that I had on hand and some sesame seeds. I got six very nice sized bread rounds. The finished texture was firm enough to hold a hamburger patty and slice of tomato and lettuce. This is a great substitute for a regular hamburger bun being that it has its own flavor. My finished product looked exactly like the one in your blog, a beautiful green, my favorite color. The ones I have stored in the refrigerator I heat up in my air fryer. This will be a perfect substitute for bread that I can no longer eat due to health complications. Thank you once again for a simple and easy recipe to follow that allows me to add some of my own little preferences.

    1. Barbara, I can not thank you enough for sharing this review!!! I’m sorry you’re experiencing health complications, but I’m thrilled you’re able to find a ‘bread’ solution 🙂 And I love your flavor variations…that’s brilliant to include some ground oats!

  24. These are awesome!! A big hot at my ” morning brunch ” with friends. They were used in sooo many ways. Every loved them. Try these, no disappointments here. Ty Nicole!!

    1. Followed the recipe. Turned out well. Easy to make, tasted great. Definitely recommend avacado buns.

      1. I LOVE THIS SO MUCH! I’ve never really like avocado but I decided to try this because of the health benefits. Glad I did! Making this for the 3rd time now. Thank you!

  25. I really like this, so easy to make and that everything bagel seasoning really brings it all together

  26. Everyone needs to try these!!! They are so good. And thank you for the tip on adding the seasonings into the mixture. Worked perfectly.

  27. I’m so excited to share this healthy bread option with you!! It’s seriously delicious and I can’t wait for you to try it. Please let me know what you think in the comments below 🙂
