Parchment Paper: Line your baking sheet with parchment paper for easy cleanup.

Delicious Serving Suggestions

  • Brighten It Up: Squeeze some fresh lemon juice over the roasted veggies for a zesty, vibrant flavor boost.
  • Add a Punch of Flavor: Toss with thinly sliced red onion or roasted Brussels sprouts for a colorful and flavorful medley.
  • Cheesy Perfection: Sprinkle Parmesan cheese during the last 10 minutes of roasting for a golden, crispy finish, or crumble feta cheese on top for a tangy twist.
  • Herbaceous Touch: Garnish with fresh rosemary sprigs or finely chopped fresh parsley for a fragrant and earthy aroma.
  • Spicy Kick: Add a sprinkle of cayenne pepper to the seasoning blend for a touch of heat.
  • Garlicky Goodness: Roast whole cloves of garlic alongside the veggies for a mellow, caramelized flavor to mash into or serve with the dish.
  • Over Grain Bowls: Pair these veggies with quinoa, couscous, or farro for a satisfying and nutritious grain bowl meal.
  • Try a Sweet Twist: Drizzle with honey or maple syrup before roasting to enhance the natural sweetness of the carrots and cauliflower.

Refrigerate: Store in an airtight container in the fridge for up to 4 days.

Reheat: Reheat in the oven or air fryer to maintain crispiness. Avoid microwaving to prevent sogginess.

Freeze: Lay cooled veggies on a baking sheet to freeze individually before transferring to a freezer bag.

How can I make these roasted carrots and cauliflower even crispier?
Toss them with a bit of cornstarch before adding oil and seasonings for an extra-crispy texture.

Can I use frozen cauliflower and carrots?
Yes, but they may not crisp up as well as fresh veggies. Thaw and pat them dry before roasting to reduce moisture.

What’s the best way to cut cauliflower?
Remove the core, then break the cauliflower into bite-sized florets for even roasting.

What other vegetables can I use?
Broccoli, sweet potatoes, and zucchini work wonderfully. Add onions for extra flavor!

Can I prepare this dish ahead of time?
Absolutely! Cut and season the veggies in advance, then store them in the fridge until ready to roast.

What seasonings work well with cauliflower and carrots?
Try chili powder, cumin, rosemary, or thyme for different flavor variations.

How do I prevent my cauliflower and carrots from getting soggy?
Avoid overcrowding the baking sheet and roast at a high temperature for the best results.
