Roasted Carrots and Cauliflower Easy Air Fryer or Oven

Gentle Tummy

Ingredients
  

  • 1 head cauliflower
  • 3 carrots (medium)
  • 2 tablespoons light olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • dash pepper

Instructions
 

  • Preheat the oven to 400°F (or air fryer to 375°F). Cut 1 head of cauliflower into florets and peel and slice 3 carrots into rounds or diagonal rounds.
  • In a large mixing bowl combine 2 tablespoons light olive oil, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, 1/2 teaspoon paprika, 1/2 teaspoon salt, and a dash of pepper or stir until combined. Toss the carrots and caulflower in the mixture until well coated.
  • AIR FRYER METHOD:
    Arrange the veggies in a single layer in the air fryer basket. Cook for 14-15 minutes, shaking halfway through.
    OVEN ROASTED METHOD:
    Spread the veggies on a baking sheet lined with parchment paper in a single layer. Roast for 20 minutes, remove the pa10-15n from the oven, flip and stir the veggies, return to the oven, and bake for 10-15 more minutes or until golden and crispy.

Notes

Use Fresh Veggies: Fresh cauliflower and carrots roast better and get crispier than frozen.
Don’t Skip the Flip: Flipping the veggies halfway ensures even browning on all sides.
Parchment Paper: Line your baking sheet with parchment paper for easy cleanup.
