Why You’ll Love This Oatmeal Dinner Roll Recipe

  • Quick and Easy: These oat flour dinner rolls are ready in just 30 minutes—no yeast or rising needed, so you can whip them up anytime.
  • Gluten-Free Goodness: With oat flour and a gluten-free blend, these rolls are soft, satisfying, and perfect for everyone at the table.
  • Protein-Packed: Thanks to Greek yogurt, these rolls have a little extra protein, making them a bit heartier than your average dinner roll.
  • Simple Ingredients: No fancy stuff here! Just a few pantry basics come together to make these rolls perfect for a quick dinner or holiday meal.

How Do Greek Yogurt Rolls Rise Without Yeast?

Greek yogurt rolls rise without yeast thanks to a mix of baking powder and baking soda. When combined with the acidity in the Greek yogurt and a bit of apple cider vinegar, these ingredients create bubbles that give the rolls a nice lift and fluffy texture—no waiting for yeast to work its magic!

Do Yeast-Free Gluten-Free Rolls Taste Like Regular Bread Rolls?

Yeast-free, gluten-free rolls are a little different from regular bread rolls, but they’re still so tasty! They have a bit more density and a subtle, natural flavor from ingredients like oat flour and Greek yogurt. While they don’t have that exact yeast flavor, they’re soft, satisfying, and make a perfect quick alternative—no yeast or rising time needed!

Ingredients & Substitutions

Here is everything you need to make the best gluten-free oat flour rolls with greek yogurt recipe:

Plain Greek Yogurt: You’ll need to use plain greek yogurt for this recipe. Full-fat greek yogurt is my favorite for the best texture. Unfortunately, regular yogurt is not thick enough and won’t work in this recipe. You can use a dairy-free greek yogurt if needed.

Apple Cider Vinegar: This helps add flavor and activates the baking soda for softer rolls. You can replace it with white vinegar or lemon juice if needed.

Honey: You can omit it or use maple syrup or agave syrup instead.

Oat Flour: You can use storebought oat flour or grind your own in a high-speed blender or food processor using old-fashioned or quick oats.

Gluten-Free Flour: Any gluten-free blend (without xanthan gum) works, or if gluten isn’t a concern, regular all-purpose flour can be used. You can also replace it with 2/3 cup of more oat flour.

Baking Powder: Stick with baking powder here—no real substitute, as it’s key for the rise.

Baking Soda: This is also needed for soft rolls.

Salt: Sea salt or kosher salt can be swapped in easily for a touch more flavor.

Egg White: This is for an egg wash on top of the rolls. You can skip it or replace it with light olive oil, avocado oil, or coconut oil.

How to Make My Gluten-Free Oatmeal Dinner Rolls Recipe

Here are easy, detailed, step-by-step instructions for making my greek yogurt dinner rolls with oat flour recipe. The instructions are also repeated in the recipe card at the bottom of this blog post.

Step 1: Make the Roll Dough

Preheat your oven to 375°F (190°C). Line an 8×8″ baking pan with parchment paper or give it a light grease.

To make the oatmeal roll dough add the wet ingredients to a large mixing bowl, including 2-1/4 cups of plain Greek yogurt, 1 tablespoon of apple cider vinegar, and 2 tablespoons of honey. Whisk until it’s smooth and creamy.

Add the dry ingredients, including 1-2/3 cups oat flour, 1/2 cup gluten-free flour, 1 tablespoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt. Stir and press with a sturdy spatula, or the dough hook in a stand mixer, until the ingredients are incorporated. All the dry ingredients should be incorporated but the dough should still be tacky when touched.

Step 2: Shape the Rolls

Divide the dough evenly into 9 pieces. Pour a small amount of oil into your hands and roll each into a smooth ball. Then, place the dough balls in your baking pan in 3 rows of 3.

Separate the egg yolk from an egg white and brush egg white onto the tops of the rolls with a pastry brush. Sprinkle a few oats on top of the muffins.

Step 3: Bake the Oat Rolls

Bake for 25-28 minutes or until the tops are golden brown and firm to the touch. Allow the rolls to cool before slicing.

Helpful Recipe Notes

Use Parchment Paper: Lining the baking sheet isn’t necessary but keeps these rolls from sticking and makes cleanup easier.

Dough Consistency: The dough should hold together but stick to your fingers when touched. You can add more greek yogurt, or oat flour to adjust the needed consistency. It should be sticky enough that you’ll need oil on your hands to keep it from sticking when you roll it.

Check for Doneness: The tops should be golden and firm—avoid overbaking for the best texture.

Fresh Baking Powder: Be sure your baking powder is fresh or the rolls will not rise properly.

Greek Yogurt: You’ll need to use greek yogurt for this recipe. Unfortunately, regular yogurt is not thick enough.

Delicious Serving Suggestions

  • Perfect with Butter: Serve these warm with a dab of butter—simple and classic.
  • Great for Breakfast: Slice them up and add a little jam or honey for a quick breakfast treat.
  • Side for Soup: They’re perfect with a cozy bowl of soup or stew.
  • Holiday Table Addition: A simple gluten-free roll for Thanksgiving or any holiday meal.
  • Use for Sliders: These rolls hold up well and are just right for mini sliders or sandwiches.
  • Mini Sandwiches: Fill with turkey, cheese, or veggies for a tasty snack or light lunch.
  • Dip in Olive Oil: Pair them with a bit of seasoned olive oil for a Mediterranean-style twist.

Refrigerate: Store any extras in an airtight container in the fridge for up to 3 days.

Freeze: Place in a freezer bag and freeze for up to a month. When you’re ready, thaw and reheat in the oven.

Reheat Gently: Warm in the oven at a low temperature to bring back that fresh-baked softness.

Can I make these greek yogurt rolls dairy-free?
Yes, just swap the Greek yogurt with a plain dairy-free greek yogurt, and you’re good to go!

How do I keep them from being too dense?
A mix of oat flour and gluten-free flour helps with lightness. Also, try not to overmix the dough and make sure the dough isn’t too dry. It should be tacky enough to stick to your fingers when touched. But, with oil on your hands you’ll be able to easily handle and shape it.

What’s the best way to reheat oatmeal dinner rolls?
A quick reheat in the oven at a low temp will keep them soft and bring back that fresh-baked feel. You can also pop one in the microwave for 20 seconds.

Can I use regular flour instead of gluten-free?
Definitely! If you don’t need them to be gluten-free, regular all-purpose flour works well here instead of gluten-free flour.

Do I need the egg white wash on top of the rolls?
Nope. You can skip it or replace it with light olive oil, avocado oil, or coconut oil. This layer helps develop a golden crust on top.

Why isn’t there any yeast?
This recipe skips yeast for a quicker roll that’s ready in just 30 minutes—perfect for when you’re short on time but want something fresh.
