Oat Flour Dinner Rolls with Greek Yogurt (No Yeast)

These Oat Flour Dinner Rolls with Greek Yogurt are made gluten-free with quick or old-fashioned rolled oats, and a touch of honey. They’re made higher in protein with Greek yogurt and do not require any yeast or rising making them the perfect bread alternative for your holiday dinner.

These oat flour dinner rolls with Greek yogurt are soft, fluffy, and have that cozy, nutty oat flavor I absolutely love. They come together fast — no yeast, no rising time, and no huge floury mess all over the kitchen. Just mix, shape, and bake for warm, golden rolls that feel special enough for a holiday meal but easy enough for a weeknight dinner.

What makes these rolls different is how they deliver that classic honey oat bread taste without the gluten or the long wait. The combination of oat flour, gluten-free flour, Greek yogurt, and a touch of honey gives them a hearty but tender texture and a lightly sweet, wholesome flavor.

This recipe felt like a dream come true for me! I used to make oat flour yeasted rolls with wheat flour, but they made a giant mess and I had to start hours before dinner. Now I can whip up these rolls in no time and still enjoy that oat flavor I crave. I love serving them warm with butter or a little honey — they’re such a fun, comforting addition to any meal.

Why You’ll Love This Oatmeal Dinner Roll Recipe

  • Quick and Easy: These oat flour dinner rolls are ready in just 30 minutes—no yeast or rising needed, so you can whip them up anytime.
  • Gluten-Free Goodness: With oat flour and a gluten-free blend, these rolls are soft, satisfying, and perfect for everyone at the table.
  • Protein-Packed: Thanks to Greek yogurt, these rolls have a little extra protein, making them a bit heartier than your average dinner roll.
  • Simple Ingredients: No fancy stuff here! Just a few pantry basics come together to make these rolls perfect for a quick dinner or holiday meal.

How Do Greek Yogurt Rolls Rise Without Yeast?

Greek yogurt rolls rise without yeast thanks to a mix of baking powder and baking soda. When combined with the acidity in the Greek yogurt and a bit of apple cider vinegar, these ingredients create bubbles that give the rolls a nice lift and fluffy texture—no waiting for yeast to work its magic!

Do Yeast-Free Gluten-Free Rolls Taste Like Regular Bread Rolls?

Yeast-free, gluten-free rolls are a little different from regular bread rolls, but they’re still so tasty! They have a bit more density and a subtle, natural flavor from ingredients like oat flour and Greek yogurt. While they don’t have that exact yeast flavor, they’re soft, satisfying, and make a perfect quick alternative—no yeast or rising time needed!

Ingredients & Substitutions

Here is everything you need to make the best gluten-free oat flour rolls with greek yogurt recipe:

Plain Greek Yogurt: You’ll need to use plain greek yogurt for this recipe. Full-fat greek yogurt is my favorite for the best texture. Unfortunately, regular yogurt is not thick enough and won’t work in this recipe. You can use a dairy-free greek yogurt if needed.

Apple Cider Vinegar: This helps add flavor and activates the baking soda for softer rolls. You can replace it with white vinegar or lemon juice if needed.

Honey: You can omit it or use maple syrup or agave syrup instead.

Oat Flour: You can use storebought oat flour or grind your own in a high-speed blender or food processor using old-fashioned or quick oats.

Gluten-Free Flour: Any gluten-free blend (without xanthan gum) works, or if gluten isn’t a concern, regular all-purpose flour can be used. You can also replace it with 2/3 cup of more oat flour.

Baking Powder: Stick with baking powder here—no real substitute, as it’s key for the rise.

Baking Soda: This is also needed for soft rolls.

Salt: Sea salt or kosher salt can be swapped in easily for a touch more flavor.

Egg White: This is for an egg wash on top of the rolls. You can skip it or replace it with light olive oil, avocado oil, or coconut oil.

How to Make My Gluten-Free Oatmeal Dinner Rolls Recipe

Here are easy, detailed, step-by-step instructions for making my greek yogurt dinner rolls with oat flour recipe. The instructions are also repeated in the recipe card at the bottom of this blog post.

Step 1: Make the Roll Dough

Preheat your oven to 375°F (190°C). Line an 8×8″ baking pan with parchment paper or give it a light grease.

To make the oatmeal roll dough add the wet ingredients to a large mixing bowl, including 2-1/4 cups of plain Greek yogurt, 1 tablespoon of apple cider vinegar, and 2 tablespoons of honey. Whisk until it’s smooth and creamy.

Add the dry ingredients, including 1-2/3 cups oat flour, 1/2 cup gluten-free flour, 1 tablespoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt. Stir and press with a sturdy spatula, or the dough hook in a stand mixer, until the ingredients are incorporated. All the dry ingredients should be incorporated but the dough should still be tacky when touched.

Step 2: Shape the Rolls

Divide the dough evenly into 9 pieces. Pour a small amount of oil into your hands and roll each into a smooth ball. Then, place the dough balls in your baking pan in 3 rows of 3.

Separate the egg yolk from an egg white and brush egg white onto the tops of the rolls with a pastry brush. Sprinkle a few oats on top of the muffins.

Expert Recipe Tips

Use Parchment Paper: Lining the baking sheet isn’t necessary but keeps these rolls from sticking and makes cleanup easier.

Dough Consistency: The dough should hold together but stick to your fingers when touched. You can add more greek yogurt, or oat flour to adjust the needed consistency. It should be sticky enough that you’ll need oil on your hands to keep it from sticking when you roll it.

Check for Doneness: The tops should be golden and firm—avoid overbaking for the best texture.

Fresh Baking Powder: Be sure your baking powder is fresh or the rolls will not rise properly.

Greek Yogurt: You’ll need to use greek yogurt for this recipe. Unfortunately, regular yogurt is not thick enough.

Frequently Asked Questions

I keep mine in an airtight container at room temperature for 1–2 days, or in the fridge for up to 5. They stay soft and tender! Just warm them slightly before serving if chilled—they bounce back beautifully.

Yes! These rolls freeze great. Just cool completely, wrap tightly, and freeze for up to 2 months. When you’re ready to enjoy, let them thaw at room temp and warm them slightly in the oven for that fresh-baked feel.

Yes, if you use certified gluten-free oats! I like using quick or old-fashioned rolled oats, blended into flour. Just make sure they’re labeled gluten-free if needed.

Greek yogurt gives these rolls a tender crumb and a boost of protein without needing yeast. It reacts with the baking soda for rise and gives a subtle tang that’s so good with the honey oat flavor.

You can try a thick dairy-free yogurt like plain coconut or almond yogurt. I’ve had the best luck with ones that are unsweetened and higher in fat—they mimic the richness of Greek yogurt best.

They’re soft, slightly chewy, and have that hearty oat flavor I love in rustic rolls. Don’t expect the exact fluff of white flour rolls, but they’re deeply satisfying in their own cozy, wholesome way.

Nope. You can skip it or replace it with light olive oil, avocado oil, or coconut oil. This layer helps develop a golden crust on top.

  1. These rolls were so simple to make. I added flaxseed to mine and they were delicious. Mine did take a little longer in the oven though, about 32 minutes. Definitely need to let cool before cutting them. This is the first recipe of yours that I have tried, will definitely be trying more of your recipes. Happened to find you on Youtube and I’m glad I did.

    1. Hi Lois, I’m so glad you found me and this recipe! It’s one of my favorites 🙂 That’s a great idea to add a little flaxseed to them! Thank you for sharing.

  2. They´re really good! Soft and tender crumb and enjoyed the taste very much. Will be entering the recipe in our bread rotation.
My yogurt was thinner than what the recipe called for, but just added 30 g of psyllium powder and the problem was solved. 🙂
    Thank you

    1. Hi Fernando, you could use tapioca flour or cassava flour instead, Or, if you don’t need them to be gluten-free, you could use all-purpose flour.

  3. Is there a way to add fiber to these gf rolls? Psyllium or flax or something else? Thank you!!

    1. Yes, you could replace a few tablespoons of the oat flour with ground flaxseed. Then adjust the moisture if needed to get the same consistency as you see in the video.

  4. I was slightly sceptical when I saw how sticky the mix was when it was time to shape the rolls. But, I was extremely happy when they came out of the oven. They looked and smelled delicious. When I cut one in half I could how light it was and airy it was. My husband, who is totally gluten free and very picky about his food, really enjoyed the taste and texture of the rolls and said he would be happy with these anytime.
Next time I am going to try 2 lozenge-shaped rolls per row to make bigger buns.
Thank you for the great recipe.

  5. This recipe changed my life! I just made these – they are so good that I literally cried. I cannot eat gluten and these rolls are so close to that delicious bready flavor and texture that I’ve been missing for so long. They remind me of those slightly dense whole wheat-y cafeteria/bakery style dinner rolls. I will be making these often, no more not having delicious rolls during holiday meals too. Next time may add some chopped jalapenos and cheddar cheese into the mix and eat with some cream cheese and everything bagel seasoning. Also going to experiment with freezing them. Thank you SO MUCH for this recipe! ❤

    1. Hi Jessie, I can’t tell you how happy I am to know you are enjoying delicious oat rolls again! You’re right, they’re a little more dense than fluffy gluten rolls, but man, they are a close second and taste so good 🙂 Thank you so much for this review!!

      1. Hi Nicole, I tried the recipe substituting the Greek yogurt with cottage cheese. I used my immersion blender to blend it into a smooth consistency. The dinner rolls turned out great and very tasty. Thank you for this recipe!

  6. These were so easy to put together and I loved the fact that they are yeast free. They came out a little dense for me but I like it with the rich flavor!

This recipe is a keeper. Will be making it again!

  7. I’m excited to finally share this recipe I’ve been working on perfecting! It’s a delicious alternative to yeasted rolls made higher in protein with greek yogurt.
