How to Make My Breakfast Pizza Tortilla Recipe
Here are easy, detailed, step-by-step instructions for making my easy breakfast pizza. The instructions are also repeated in the recipe card at the bottom of this blog post.
Step 1: Assemble the Pizza
Preheat the oven to 400°F (200°C). Line a baking sheet with a sheet of parchment paper.
Place the corn tortilla on a baking sheet and spread the pizza sauce evenly over the top of the pizza. Keep the sauce within .25 inch of the edge of the tortilla.
Sprinkle the mozzarella cheese over the sauce. Build it up a little denser toward the edges of the tortilla to contain the egg.
Spread your cooked meat on top of the cheese.
Crack an egg in the center of the tortilla, keeping the yolk intact. Season with salt and pepper.
Step 2: Bake the Tortilla Pizza
Bake for 8-10 minutes for a runny yolk or 10-12 minutes for a firmer yolk.
Remove from the oven and serve warm.
Expert Recipe Tips
For a firmer egg: Bake the pizza for an additional 2 minutes until the yolk is cooked through.
Crispier tortilla: Place the tortilla directly on the oven rack for a crispier base.
Pizza slicing: You can slice up your tortilla like a traditional pizza or simply fold it in half and eat it like a taco.
Melty cheese: I recommend buying block cheese and shredding it for the best melt. Store-bought pre-shredded cheese is often coated in cellulose to keep it from sticking together and doesn’t melt quite as smoothly.
Delicious Serving Suggestions
- Breakfast Wrap: Roll it up with some grilled chicken, cherry tomatoes, and green onion for a tasty, portable breakfast.
- Side of Veggies: Serve with sliced red bell pepper, mushrooms, or a small side salad topped with feta cheese for extra nutrients.
- Add Heat: Top with red onion, bacon, and a drizzle of hot sauce for a spicy kick.
- Cheesy Twist: Swap mozzarella for colby jack or alfredo sauce for a creamy variation.
- Tropical Twist: Add pineapple for a sweet-savory combo pizza.
- BBQ Chicken Tortilla Pizza: Use bbq sauce and top with red onions and cooked chicken.
