This Cottage Cheese Banana Bread with Chocolate Chips is one of my favorite recipes for a wholesome breakfast or a sweet treat. It has all the familiar flavors of classic banana bread but with a gluten-free twist using oat flour and almond flour. The cottage cheese gives it a subtle protein boost, but don’t worry—it’s blended with the bananas, so you won’t even notice it’s there.

The best part? This bread bakes with a beautiful, bakery-worthy top, has a fluffy texture, and is loaded with melted chocolate chips. It’s the kind of quick bread I love to make for family gatherings or to enjoy as a snack throughout the week. Whether it’s a special occasion like Easter or Mother’s Day, or you just need a treat, this banana bread will deliver every time.

How do you eliminate the chunky texture of cottage cheese curds?

If you like the taste of cottage cheese but are not a fan of its curdled texture, you are not alone. In this recipe, we quickly and easily blend it to a smooth consistency. The cottage cheese curds are no longer detectable in the creamy texture.

If this is your first time using the secret ingredient cottage cheese in baking, this easy, quick bread recipe is perfect for you. Cottage cheese adds a ton of moisture and healthy fat for a high-protein sweet snack.

Ingredients & Substitutions

Here is everything you need to make the best-tasting cottage cheese banana chocolate chip muffin recipe:

Ripe Bananas: For the most natural sweetness, use very ripe bananas with large brown spots on the peel. For a different flavor, substitute the bananas with an equal amount of applesauce or pumpkin puree.

Cottage Cheese: You can use fat-free cottage cheese or full-fat cottage cheese. I recommend full-fat for the best-tasting cottage cheese filling and thickest texture. My favorite brand of cottage cheese is Daisy because it does not contain carrageenan. You can substitute cottage cheese with an equal amount of ricotta cheese, sour cream or Greek yogurt for a similar texture and flavor.

Cane Sugar: You can replace cane sugar with coconut sugar, brown sugar, or a sugar substitute like stevia or erythritol. But cane sugar gives the best results and a lighter brown color.

Light Olive Oil: Melted coconut oil, melted butter, or any neutral oil like canola or vegetable oil can be used in place of light olive oil.

Oat Flour: If you don’t have oat flour, you can make your own by blending rolled oats in a food processor or blender until fine.

Almond Flour: You can substitute almond flour with any other nut flour or seed flour, such as hazelnut flour or sunflower seed flour.

Mini Chocolate Chips: Use dairy-free chocolate chips or chopped nuts if you prefer a different topping.

How to Make My Moist Cottage Cheese Banana Bread Recipe:

Here are easy, step-by-step instructions to make gluten-free chocolate chip banana muffins:

Step 1: Make the Banana Bread Batter

Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.

In a blender, food processor, or large mixing bowl with an immersion blender, combine the wet ingredients, including ripe bananas, cottage cheese, cane sugar, oil, and vanilla extract. Blend until smooth and well combined. If using a blender, pour the mixture into a large bowl and add the eggs. With a hand mixer, or whisk, mix until well combined.

Add the dry ingredients, including oat flour, almond flour, baking powder, cinnamon, and salt. Mix until just combined. Be careful not to overmix.

Fold in the mini chocolate chips, reserving some for topping the bread if desired.

Step 2: Bake the Banana Bread

Pour the batter into the greased loaf pan and smooth the top with a spatula. Sprinkle the remaining chocolate chips on top, if using.

Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Remove the bread from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.

Gluten-Free Chocolate Chip Oat Banana Bread Recipe Notes

Oat Flour: You can use store-bought oat flour or blend your own from quick oats or old-fashioned oats. Simply add them to a blender or food processor and mix for about 15 seconds or until you have fine flour.

Ripe Bananas: Use ripe bananas with brown spots for the best flavor and sweetness.

Blending Cottage Cheese: Blending the cottage cheese with the bananas helps remove any curdled texture, resulting in a smoother batter.

Flour Substitutions: Feel free to experiment with different flour combinations. You can use all oat flour or all almond flour if you prefer. But I’ve found this ratio of oat and almond flour provides a fluffy texture for a satisfying snack bread.

Sweetness: Adjust the amount of sugar based on your preference and the ripeness of your bananas. Riper bananas will add more natural sweetness.

Serving Suggestions

You can enjoy this bread as is or add a drizzle of honey, a spread of peanut butter, or a pat of butter for added flavor and variety. You can also serve it alongside greek yogurt for additional protein or banana pudding. I think the bread tastes best at room temperature or slightly warm.

Refrigerator: Store the moist banana bread in an airtight container in the refrigerator for up to a week.

Freezer: Banana bread freezes well. Wrap individual slices or the whole loaf tightly in plastic wrap and then aluminum foil before placing it in a freezer-safe bag or container. It will keep for up to 3 months in the freezer.

Thawing: To thaw frozen banana bread, remove it from the freezer and let it sit at room temperature for a few hours or overnight in the refrigerator. You can also reheat slices in the microwave or oven if desired.

Sliced vs. Whole: If you plan to freeze the banana bread, consider slicing it before freezing. This way, you can thaw and enjoy individual slices without having to defrost the whole loaf.
