Ripe Bananas: For the most natural sweetness, use very ripe bananas with large brown spots on the peel. For a different flavor, substitute the bananas with an equal amount of applesauce or pumpkin puree.
Cottage Cheese: You can use fat-free cottage cheese or full-fat cottage cheese. I recommend full-fat for the best-tasting cottage cheese filling and thickest texture. My favorite brand of cottage cheese is Daisy because it does not contain carrageenan. You can substitute cottage cheese with an equal amount of ricotta cheese, sour cream or Greek yogurt for a similar texture and flavor.
Cane Sugar: You can replace cane sugar with coconut sugar, brown sugar, or a sugar substitute like stevia or erythritol. But cane sugar gives the best results and a lighter brown color.

Add the dry ingredients, including oat flour, almond flour, baking powder, cinnamon, and salt. Mix until just combined. Be careful not to overmix.
Fold in the mini chocolate chips, reserving some for topping the bread if desired.
Step 2: Bake the Banana Bread
Pour the batter into the greased loaf pan and smooth the top with a spatula. Sprinkle the remaining chocolate chips on top, if using.
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
