Shred the carrot and set it aside. Spray the inside of a microwave-safe mug with non-stick spray or coat with butter and set aside.

In a small bowl, add the wet ingredients, including egg, oil, apple cider vinegar, vanilla extract, maple syrup, and cane sugar, until well combined.

Then, add the dry ingredients, including almond flour, baking powder, cinnamon, ginger, nutmeg, and salt to the mug. Stir until the batter is smooth.

Fold in the shredded carrot and coconut, until evenly distributed in the batter.

Step 2: Microwave the Mug Cake

Pour half of the batter into the mug and drop in half of the golden raisins. Pour in the remaining batter and top with the remaining raisins.

Microwave the mug on high for 1 to 2 minutes, or until the cake is set and springs back when lightly touched. Cooking time may vary depending on the microwave.

  • 1 tablespoon cane sugar
  • 1/3 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • pinch dried ginger
  • pinch nutmeg
  • pinch salt
  • 1 tablespoon shredded carrot (1 baby carrot)
  • 1 tablespoon coconut
  • 1 tablespoon golden raisins

Almond Butter Caramel:

  • 1 tablespoon almond butter
  • 1 tablespoon maple syrup
  • 2 teaspoons milk
  • pinch salt

Cream Cheese Frosting:

  • 2 tablespoons whipped cream cheese
  • 1 teaspoon butter
  • 1 tablespoon powdered sugar
