My husband has Mexican ancestry and loves all things spicy, but unfortunately, I do not. If he adds the spice to a dish, then I can’t go near it without a fire house. To make us both happy, I created recipes that had tons of flavor but were easy on the spice. Then, he can easily add spice to his heart’s content to his own plate. And our six kids can adjust their own spice level, too—everyone wins!
