My Chicken Parmesan uses almond flour in the breading. Not only does this eliminate the gluten, but the almond flour adds more protein, fiber, and flavor!!
I make a double batch of the Pumpkin Protein Pancakes. I pour them to be the same size as a slice of bread. Then I store them in the fridge, and my family pulls them out in the morning and pops them in the toaster for a quick breakfast.
