Chop a large banana or two small bananas into .5" chunks.
Add the greek yogurt, honey, peanut butter, vanilla, and salt to a bowl and mix with a spatula until smooth. Fold in the banana chunks.
Add your favorite chocolate chips and coconut oil to a microwave-safe bowl and heat for 30 seconds in the microwave. Remove the bowl and mix the chocolate. Microwave for an additional 25 seconds and then mix well.
Spoon a small amount of chocolate into the bottom of each cup in a mini-muffin tray. You can use paper liners in your muffin if you like.Add a scoop full of peanut butter banana yogurt to each cup using a small cookie scoop.Layer 3-5 peanuts on top of the yogurt.Spoon a small amount of chocolate over the peanuts. Sprinkle a dash of course sea salt over the melted chocolate in each cup.Freeze for 2+ hours until set.

Banana Ripeness: Use a ripe banana for the best flavor and sweetness. The riper the banana, the sweeter the clusters will be.Muffin Tin: You can use muffin liners or pour them directly into the muffin tin. Chocolate Coating: You can cover the entire cluster in chocolate by first pouring the chocolate into the muffin tin and then using a spoon to coat the sides of each muffin cup with chocolate.
