Instructions
Combine the greek yogurt, mango, pineapple, honey, vanilla, and salt in a mixer or the cup from a Nutribullet. Blend until smooth. You can use any blender or immersion blender.
Add the toasted coconut and chopped macadamia nuts to your cup and stir with a spatula.
Slice the kiwi into 1/8" slices. To freeze the kiwi on the side of your popsicles you'll need this horizontal silicone popsicle mold which allows your kiwi to freeze in place.If you use vertical popsicle molds, you can cut the kiwi into smaller chunks and mix them with the yogurt since you won't be able to place the kiwi slices against the sides. You can skip the following steps for cutting the kiwi to pouring the yogurt into your molds.Cut the center fruit from the peel using a metal spoon or tablespoon to create a neat circle. Cut four of the circle pieces in half.
Place two kiwi halves on the top and bottom of each silicone popsicle mold. Then place a full circle in the middle of each popsicle mold. Of course, you can arrange the kiwi however you like. You have complete creative license :)Pour the ice cream into your popsicle mold of choice. Insert the popsicle sticks and cover them with the silicone cover. Freeze for 3-4 hours or until set.
