Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.In a large bowl with an immersion blender, food processor, or upright blender, add the ripe bananas, cane sugar, cottage cheese, avocado oil, applesauce, and vanilla extract. Blend until everything is combined and the cottage curds are smooth. Then add the eggs and gently blend just until blended.Add the dry ingredients, including cassava flour, baking powder, baking soda, and salt stirring until just combined. Be careful not to overmix.Fold in the mini chocolate chips gently. Pour the banana bread batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top of the bread is a golden brown.Remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes.Transfer the bread to a wire rack to cool completely before slicing and serving.
