Roasted Carrots with Feta Cheese and Garlic Recipe

Ingredients
  

  • 2 pounds carrots
  • 2 tablespoons oil (light olive is my fave)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • dash pepper
  • 1/3 cup feta cheese
  • 2 tablespoons fresh parsley

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
    Peel the carrots and with a sharp knife, cut them into sticks or coins, about 1/2 inch thick. Cut larger carrots into fourths.
  • In a large bowl, combine the carrot sticks, olive oil, garlic powder, paprika, salt, and pepper. Toss until the carrots are evenly coated with the seasoning.
    Spread the seasoned carrots in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for about 20-25 minutes, or until the carrots are fork tender and caramelized, stirring halfway through cooking for even roasting.
  • Remove the carrots from the oven and let them cool for a few minutes on the sheet pan before transferring them to a serving plate.
    Sprinkle the roasted carrots with crumbled feta cheese and chopped fresh parsley.

Notes

Carrot Size: Depending on the size of your carrots try to slice the carrots similar in size so they cook evenly.
Adjusting Seasonings: Feel free to adjust the seasonings to suit your taste. You can add more or less garlic powder, paprika, salt, or pepper according to your preference or use your own spice blend.
Roasting Time: Keep an eye on the carrots as they roast to avoid burning. Cooking times can vary depending on the size and thickness of the carrot pieces.
