Ranch Chicken Low Carb Tortilla Pizza Quick Air Fryer

Ingredients
  

  • 1 low-carb 8" tortilla
  • 2 tablespoons ranch salad dressing
  • 2 leaves fresh basil
  • 1/2 cup mozzarella cheese (shredded)
  • 1/2 cup pre-cooked chicken (chopped)
  • 1/4 cup tomatoes (chopped)

Instructions
 

  • Preheat your air fryer to 385°F (195°C).
    Carefully place your tortilla in the bottom of the air fryer basket.
    Place a small heatproof glass or ceramic bowl on top of the tortilla to keep it from blowing around in the air fryer.
    Air fry for 4 minutes at 385°F. Flip the tortilla over half way and move the small bowl to a different spot on the tortilla. The tortilla should be stiff enough to hold its shape but not toasted brown yet.
    Once done, carefully remove the pizza from the air fryer using tongs or a spatula and place it on a cutting board or plate.
  • Spread 2 tablespoons of ranch dressing evenly over the tortilla.
    Then sprinkle 1 tablespoon of chopped basil leaves and the shredded mozzarella cheese on top of the pizza.
    Then, spread the chopped chicken and tomatoes over the cheese.
    Carefully transfer the prepared tortilla pizza to the preheated air fryer basket.
  • Air fry for 3 minutes at 385°F or until the cheese is bubbly and the edges of the tortilla are lightly golden brown. If needed, cook for an additional 1-2 minutes.
    Once done, carefully remove the pizza from the air fryer using tongs or a spatula. Let it cool for a minute or two before slicing and serving.

Oven Method:

  • Preheat the oven to 400°F (200°C) and place the tortilla on a baking sheet or pizza stone. Bake for 3-4 minutes until slightly crisp. Remove from the oven and spread 2 tablespoons of ranch dressing over the tortilla, then sprinkle with chopped basil and shredded mozzarella. Add the chopped chicken and tomatoes on top. Return the tortilla pizza to the oven and bake for another 6-8 minutes, or until the cheese is bubbly and the edges are golden brown. Let it cool for a minute before slicing and serving.

Notes

Chopped Chicken: The chicken must be cooked before adding it to the top of the pizza. 
Tortilla Size: The recipe calls for a standard 8-inch tortilla. You can use a larger tortilla if it will fit inside your air-fryer and not touch the sides. You also may need to adjust the cooking time accordingly.
