Protein Snickers Overnight Oats with Cottage Cheese

Ingredients
  

  • 1 cup old fashioned oats
  • 3/4 cup almond milk
  • 1/2 cup cottage cheese
  • 3 tablespoons protein powder
  • 2 tablespoons maple syrup
  • 2 tablespoons peanut butter
  • 2 tablespoon chocolate chips
  • 1/2 teaspoon coconut oil
  • 2 tablespoons peanuts

Instructions
 

  • In an upright blender or food processor, combine 3/4 cup almond milk, 1/2 cup cottage cheese, 3 tablespoons protein powder, and 1 tablespoons maple syrup. Blend until smooth.
  • In an airtight jar or container combine 1 cup old fashioned oats, and 2 pinches of salt with the blended cottage cheese mixture.
    Cover and refrigerate overnight, or at least for 4 hours, so the oats soften and absorb the flavors.
  • In a small bowl, stir together 2 tablespoons peanut butter and 1 tablespoon maple syrup until smooth.
    In a microwave-safe bowl, combine 3 tablespoons chocolate chips and  1/2 teaspoon coconut oil and heat in 25-second intervals, stirring in between, until melted.
    In your serving bowl layer the oats, peanut butter, melted chocolate, and 1 tablespoon chopped peanuts and enjoy!

Make It Your Own: Feel free to add an extra scoop of protein powder if you’re looking for an even bigger protein boost. This recipe is all about keeping you full and fueled!
Sweetness Level: If you have a sweet tooth, you can add a little extra maple syrup or even a dash of honey. Adjusting to your taste makes it even better!
