In an upright blender or food processor, combine 3/4 cup almond milk, 1/2 cup cottage cheese, 3 tablespoons protein powder, and 1 tablespoons maple syrup. Blend until smooth.
In an airtight jar or container combine 1 cup old fashioned oats, and 2 pinches of salt with the blended cottage cheese mixture.Cover and refrigerate overnight, or at least for 4 hours, so the oats soften and absorb the flavors.
In a small bowl, stir together 2 tablespoons peanut butter and 1 tablespoon maple syrup until smooth.In a microwave-safe bowl, combine 3 tablespoons chocolate chips and 1/2 teaspoon coconut oil and heat in 25-second intervals, stirring in between, until melted.In your serving bowl layer the oats, peanut butter, melted chocolate, and 1 tablespoon chopped peanuts and enjoy!
