Feta Fried Eggs with Corn Tortilla Breakfast Tacos

Gentle Tummy

Ingredients
  

  • 1 egg
  • 1 corn tortilla
  • 1/4 cup feta cheese
  • 1 cup leafy greens
  • 1 teaspoon butter
  • 1 teaspoon olive oil (extra light olive oil is my fave)
  • dash paprika
  • dash garlic powder
  • dash salt
  • dash pepper

Instructions
 

  • Lightly spray a small/medium-sized frying pan with oil (my favorite is olive oil). Lightly brown on both sides of the corn tortillas. Transfer tortillas to a paper towel-lined plate to cool.
  • Respray the pan with the oil. Add the butter. The butter should begin to sizzle, letting you know the pan is hot enough and ready to fry your egg. Pour feta cheese into the middle of the pan and gently spread in a large circle. Crack one egg and pour it over the center of the feta cheese. Be careful not to break the yolk.
    Sprinkle the dashes of paprika, garlic powder, salt, and pepper over the egg. Allow the egg to cook until the outer edges are lightly brown and crispy. You can cover the egg with a clear lid to cook the egg faster.
  • Carefully slide the fried egg from the frying pan onto the corn tortilla. Spread a handful of leafy greens over the fried egg. Press down on the egg yolk with the lettuce to break the yolk. Use a lettuce leaf to spread the liquid yolk over the lettuce. You can fold the tortilla in half and enjoy it as a taco or eat it open-faced on a plate with a fork.
