  • In a high-speed blender or food processor, combine 1-1/2 cups of cottage cheese, 1/3 cup of maple syrup, 1/4 cup of cocoa powder, 1/2 teaspoon of vanilla extract, 2 tablespoons of protein powder (if using), and a pinch of salt.
    Blend the ingredients until smooth and creamy. Scrape down the sides of the blender or food processor as needed to ensure everything is well combined.
    Taste the mixture and adjust the sweetness or cocoa powder amount if desired.
    Serve the chocolate mousse immediately or chill it in the refrigerator for about an hour to allow it to set and thicken.
    Once chilled, you can enjoy the mousse or top it with your favorite toppings, such as fresh berries, shaved chocolate, chopped nuts, or a drizzle of melted chocolate.

Consistency: The texture of the mousse will depend on the type of cottage cheese or Greek yogurt you use. For the smoothest texture use a high-powered blender or food processor. If you use greek yogurt, you can also use a hand mixer.
Sweetness: Adjust the amount of maple syrup or alternative sweetener to suit your taste. You can always start with less and add more as needed.
Chilling: If you prefer a firmer texture, chill the mousse in the refrigerator for at least an hour before serving. This will allow it to set and thicken.
