Add 3/4 cup oat flour, 3/4 cup almond flour, 3/4 cup almond butter, 1/3 cup maple syrup, 1 tablespoon chia seeds, 1 teaspoon vanilla, and 1/2 teaspoon salt to a food processor. Blend until everything is fully combined and a thick dough begins to form.
Stop the processor and scrape down the sides if needed. The dough should be soft, slightly sticky, and scoopable, similar to cookie dough. If it feels too dry, add a small splash of maple syrup. If it feels too wet, add a tablespoon of oat flour.
Add 3 tablespoons mini chocolate chips and pulse a few times just until they’re evenly mixed in. Mixing them in last keeps the chocolate pieces intact.
Scoop about one tablespoon of dough and roll it between your palms to form a ball. Place the bites on a tray or directly into your storage container.
If the dough feels too soft to roll, place it in the fridge for 10 minutes, then continue shaping the bites.
