Greek Yogurt French Onion Dip (High-Protein)

Gentle Tummy

Ingredients
  

  • 1/2 yellow onion
  • 1-1/2 cups greek yogurt
  • 1/4 cup mayo (see my recipe in notes)
  • 2 cloves minced garlic
  • 1 tablespoon honey (optional)
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • dash black pepper

Instructions
 

  • Thinly slice 1/2 yellow onion. In a small skillet, heat 2 tablespoons light olive oil over low/medium heat. Add the onions and cook, stirring every few minutes, until soft and golden, about 25-30 minutes. Add the minced garlic cloves during the last minute or two until soft and fragrant. Transfer to a plate and let them cool slightly.
  • In a food processor or blender, combine the cooked onions, 1-1/2 cups Greek yogurt, 1/4 cup mayo, 1 tablespoon honey, 1 tablespoon Worcestershire sauce, 1/4 teaspoon salt, and a dash of black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed. Chill for at least 30 minutes before serving.

Notes

Blending makes it gentler: Blending the onions not only smooths the texture, but really helps with digestion, especially if raw onions bug you like they do me.
Let it rest: This dip honestly tastes better after chilling. I always try to make it ahead so the flavors really come together.
Use full-fat yogurt: Trust me on this. Low-fat works, but full-fat gives the dip that luscious texture.
Don't rush the onions: Even a quick caramelize adds so much flavor. Just a few extra minutes makes a big difference.
