Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine 1-1/3 cups oat flour, 1/2 cup almond flour, 1/4 cup grated parmesan cheese, 1-1/2 teaspoons baking powder, and 1/2 teaspoon salt. Stir well to ensure all ingredients are evenly distributed.
Blend 1 cup of cottage cheese in a blender or food processor until smooth. Stir in 1 egg until well-blended. Pour the wet ingredient mixture into the bowl with the dry ingredients. Stir with a rubber spatula until a thick, sticky dough forms. You can also use a stand mixer.
Lightly oil your hands and divide the dough into six portions. Roll the dough in your hands to form a smooth ball. Press down and spread it on the cookie sheet to a 3/4" thickness. Leave it slightly higher in the center.
Separate one egg yolk from the white. Brush the tops and sides of each bun with the egg white to give them a glossy finish. Sprinkle Everything bagel seasoning evenly over the tops of the buns.
Bake for 20-25 minutes, or until the buns are golden brown. Remove the buns from the oven and allow them to cool completely before slicing.
