Frozen Cottage Cheese Banana Bark with Peanuts

Ingredients
  

  • 2 cups cottage cheese
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 2 pinches salt
  • 2 bananas (sliced)
  • 3 tablespoons peanut butter
  • 1/4 cup chocolate chips
  • 2 teaspoons coconut oil
  • 1/4 cup peanuts

Instructions
 

  • Add 2 cups cottage cheese, 1/4 cup pure maple syrup, 1 teaspoon vanilla extract, and 2 pinches of fine sea salt to a blender or food processor. Blend until completely smooth and creamy, about 1-2 minutes. This step is crucial for removing the curdled texture.
  • Line a large cookie sheet with parchment paper for easy removal. Spread the smooth cottage cheese mixture evenly across the pan, creating a layer about 1/2 inch thick. Use an offset spatula to get it nice and even.
  • Warm 2 tablespoons natural peanut butter slightly to make it easier to drizzle. Drop spoonfuls over the cottage cheese base, then use a knife to create beautiful swirls throughout.
  • Slice 2 ripe bananas into 1/4-inch rounds. Gently press the banana slices into the cottage cheese base, distributing them evenly across the surface.
  • Melt 1/2 cup dark chocolate chips with 1 teaspoon coconut oil in the microwave in 30-second intervals, stirring between each interval until smooth. Drizzle the melted chocolate over the bananas and cottage cheese base.
  • Sprinkle 1/4 cup chopped roasted peanuts over the top and gently press them into the cottage cheese. Freeze until completely firm, about 1-2 hours. Break into pieces and enjoy immediately while frozen.

Blend until completely smooth: Take the extra minute to ensure no cottage cheese curdles remain - this makes all the difference in the final creamy texture.
Use ripe but firm bananas: They should be sweet but still hold their shape when pressed into the cottage cheese base.
