Mash the berries with a fork or potato masher. Then simmer for an additional 5 minutes or until the sauce thickens to your desired consistency. Pour the strawberry sauce into a blender or the chopper cup with an immersion blender and blend until smooth.
Donuts:
Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or coconut oil and set aside.In a large mixing bowl, whisk together the eggs, cane sugar, strawberry sauce, coconut oil, sour cream, and vanilla extract until well combined.In a separate bowl, whisk together the almond flour, cassava flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.Spoon the doughnut batter into the prepared donut pan, filling each cavity about 3/4 full. You can also pipe in the batter with a pastry bag or ziploc bag.
Place the donut pan in the preheated oven and bake for 15-18 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.Remove the donut pan from the oven and allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
In a small bowl, whisk together the powdered cane sugar and 3 tablespoons of the strawberry sauce until smooth. If the glaze is too thick, you can add a little water or milk to thin it out. For a thick glaze, add more powdered sugar.Once the donuts have cooled completely, dip the tops of each donut into the strawberry glaze, allowing any excess glaze to drip off. You can also pour the glaze on the tops of the donuts with a spoon. Place the glazed donuts back on a cooling rack to set for a few minutes.Serve the baked strawberry donuts immediately, or store them in an airtight container at room temperature for up to 2 days. As an optional garnish, you can sprinkle the tops with diced strawberries.
