Remove the pits from 16 medjool dates and place them in a bowl. Cover with hot tap water and let them soak for 10 minutes until they're soft and plump. This makes them much easier to blend smooth.
Drain the soaked dates and add them to your food processor or high-speed blender. Add 2/3 cup almond milk, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Blend until completely smooth and creamy, scraping down the sides as needed.
If your healthy caramel sauce is too thick, add an extra tablespoon of almond milk and blend again. For a thicker consistency, add one more soaked date. Taste and adjust sweetness with extra maple syrup if desired.
