Date Caramel Sauce with Almond Milk & Maple

  • Remove the pits from 16 medjool dates and place them in a bowl. Cover with hot tap water and let them soak for 10 minutes until they're soft and plump. This makes them much easier to blend smooth.
  • Drain the soaked dates and add them to your food processor or high-speed blender. Add 2/3 cup almond milk, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Blend until completely smooth and creamy, scraping down the sides as needed.
  • If your healthy caramel sauce is too thick, add an extra tablespoon of almond milk and blend again. For a thicker consistency, add one more soaked date. Taste and adjust sweetness with extra maple syrup if desired.
