In a high speed blender, food processor, or the chopper cup with an immersion blender, combine 1 cup of cottage cheese, 1/2 cup of powdered sugar, 1 teaspoon of lemon juice, and a pinch of salt.Blend the mixture until smooth and creamy, scraping down the sides of the blender or food processor as needed.
OPTIONAL:For an even lighter texture and creamy flavor, fold in 1/2 cup of whipped cream to lighten the texture of the mixture.Spoon the cottage cheese into a small bowl and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Texture: For best results scrape down the sides of the blender or food processor to ensure all the ingredients are well incorporated and avoid stray cottage cheese curds.Sweetness: Adjust the amount of powdered sugar to suit your taste. You can add more or less sugar depending on how sweet you prefer the dessert to be.
