Caramel Apple Pretzel Bites with Dates and Peanuts

Ingredients
  

  • 1 green apple
  • 4 medjool dates
  • 1/2 cup chocolate chips (dairy-free if needed)
  • 2 teaspoons coconut oil
  • 24 pretzels (gluten-free if needed)
  • 1/2 cup peanuts

Instructions
 

  • Slice the apple into 8 wedges, then cut each wedge into 3 chunks (you'll have 24 pieces total). Cut the medjool dates in half, then cut each half into 3-4 small pieces. Chop the peanuts to your desired size. I like them in small pieces so they stick better to the chocolate.
  • Add chocolate chips and coconut oil (if using) to a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and completely melted. Don't skip the stirring because it prevents the chocolate from burning.
  • Line a baking sheet with parchment paper and spread out 24 pretzels in a single layer.
  • Push a toothpick down through an apple chunk with the green skin side up, then through a piece of date until the tip of the toothpick pokes out the bottom. Holding the top of the toothpick, dip the apple in the melted chocolate on all four sides, leaving just the green top exposed (this keeps the apple from turning brown). Let any excess chocolate drip back into the bowl.
  • Hold the chocolate-coated apple over a small bowl of chopped peanuts and sprinkle them over the wet chocolate. Place the finished bite on top of a pretzel on your prepared baking sheet. Repeat with all remaining apple chunks.
  • Place the baking sheet in the refrigerator or freezer until the chocolate sets completely—about 10-15 minutes in the freezer or 30 minutes in the fridge. Once set, they're ready to enjoy!

Notes

Slice flat bottoms on apple chunks: This helps them sit more evenly on the date slice and makes them easier to assemble without wobbling.
Work with room temperature dates: If your dates are cold or too firm, let them sit at room temperature for 10 minutes before cutting—they'll be much easier to slice.
Let excess chocolate drip off: After dipping each apple, hold it over the bowl for a few seconds to let excess chocolate drip back. This prevents a big chocolate puddle on your pretzel base.
Coat the exposed apple completely: Dipping all four sides of the apple and leaving only the green skin exposed actually keeps the apple from browning because the chocolate seals it.
