Caesar Salad Smash Chicken Tacos (GF Option)

Ingredients
  

  • 6 jumbo corn tortillas (or small flour)
  • 1 pound ground chicken
  • 3 cloves minced garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 4 cup lettuce (shredded)
  • 1/4 cup caesar dressing
  • 2 ounces parmesan cheese

Instructions
 

  • In a large bowl, combine 1 lb ground chicken, 1 tablespoon lemon juice, 3 minced garlic cloves, 1 tablespoon Italian seasoning, 1/2 teaspoon salt, and a dash of pepper. Mix everything together by hand until well combined and all the seasonings are evenly distributed.
  • Spread the seasoned ground chicken mixture evenly across 6 large white corn tortillas, pressing it all the way to the edges. This ensures every bite has plenty of flavorful chicken.
  • Heat a large skillet over medium heat and add 1 tablespoon light olive oil. Carefully place each tortilla chicken-side down in the skillet, laying them away from you to avoid oil splashes. Optional: Place a flat heat-proof dish or weight on top to help the chicken cook flat and quick. Cook for 1-2 minutes until the edges of the chicken begin to brown, then flip and cook for another 30 seconds until lightly toasted.
  • Place the cooked tacos on a cooling rack for a minute so the tortillas don't get soggy. In a bowl, mix 4 cups chopped lettuce with 1/4 cup caesar dressing. Top each taco with the dressed lettuce and 2 ounces of shredded parmesan cheese. Serve immediately while the tortillas are still crispy.

Notes

Mix seasonings by hand: Using your hands ensures the lemon juice, garlic, and seasonings get evenly distributed throughout the ground chicken without overmixing.
Spread chicken to the edges: This prevents bare spots and ensures every bite has plenty of flavorful protein.
Use a cooling rack: Letting the cooked tacos rest on a rack for a minute prevents the tortillas from getting soggy from the juicy chicken.
Don't skip the weight: Pressing down with a flat dish helps the chicken cook evenly and creates better contact with the pan for crispier results.
