5-Minute Cherry Balsamic Vinaigrette Dressing

Ingredients
  

  • 1 cup cherries
  • 1/4 cup balsamic vinegar
  • 1/4 cup light olive oil
  • 1 teaspoon dijon mustard
  • dash salt

Instructions
 

  • Remove pits from 1 cup fresh cherries. If using frozen cherries, thaw them completely first. You can use any variety of cherries - sweet or tart both work beautifully in this recipe.
  • Add the pitted cherries, 1/4 cup balsamic vinegar, 1/4 cup light olive oil, 1 teaspoon Dijon mustard, and a dash of salt to a blender. Blend until completely smooth, about 30-60 seconds.
    Give it a taste and adjust sweetness if needed by adding 1-2 teaspoons honey or maple syrup. The natural cherry sweetness is usually perfect on its own, but you can customize it to your preference.
    Transfer to a jar or bottle and give it a good shake before each use. Drizzle over your favorite salads and enjoy immediately, or store in the refrigerator for up to one week.

Pit cherries safely: Use a cherry pitter or gently press a chopstick through the center to remove pits without making a mess.
Blend thoroughly: Make sure to blend until completely smooth for the best texture - any cherry chunks will settle at the bottom.
Shake before using: The ingredients naturally separate, so give it a good shake after it's been sitting in the fridge.
Taste and adjust: Every batch of cherries has different sweetness levels, so taste and add honey or maple syrup if you prefer it sweeter.
